Preheat a large pan to medium heat. Preheat oven to 200℉ and set an oven-safe plate on a rack.
Combine all the dry ingredients in a large bowl. Add the almond or soy milk and applesauce to the mixture. Mix until smooth.
Pour or spoon some of the mixture into the pan, enough to make one pancake at a time. Flip when bubble have appeared in the middle of the pancake, or if the edges are looking stiffened. Place pancake on the preheated plate in the oven to keep warm. Repeat until the batter is gone.
* Top with fruit of your choice (I used bananas), or you can also add the fruit to the mixture.
* This recipe serves 4 (2 large pancakes per person).
